Distillation, Maturation and Dunnage

Since going back on spirit at Wolfburn in early 2013 we continue to distill, mature and bottle on site in Thurso. Traditional pot stills of 5,500 litres and 3,800 litres respectively send spirit weekly to the dunnage warehouses where we mature our spirit in a combination of second fill american oak quarter casks, first fill american oak ex bourbon casks and first and second fill spanish oak ex sherry casks.


The bottling hall, in use since early 2016, gives us great flexibility to bottle both our general editions but also smaller more specialist bottlings for those gems that sometimes turn up in the warehouse during routine sampling.  Produced and bottled to the highest standards, none of our whisky is either chill filtered or coloured.
