When a small parcel appeared last year we took them, and then did the thing that makes a cask finish worth doing at all: we filled them with some of our oldest whisky rather than our youngest.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan style=\"color: rgb(0, 0, 0);\"\u003eThat spirit went into first-fill bourbon casks in 2014 and stayed there for eleven years, maturing slowly in seaside warehouses on the Caithness coast where the temperature barely moves from one season to the next. The Madeira casks took it for its final year. Long enough for the wood to say something.
