Crafted from the finest Spanish oak these Manzanilla casks arrived at Wolfburn with an exquisitely dry nose to them. Used to finish this whisky at the end of its maturation the resultant dram is a delight. Fruity, sweet, full-bodied and sumptuous. A whisky that every whisky lover should try.

Tasting notes

ON THE NOSE – Golden syrup meets cashew nut butter, overlaid with seductive vinous tones. An exceptional depth of sweet aromas. 

ON THE PALATE – There’s a wonderful oily richness to this dram – it coats the palate and the flavours just keep unfurling. Classic dry Manzanilla tones lead to rich fruit flavours: sultanas, plums and dates, with subtle hints of toffee and honey. 

FINISH – Sweet wine and fruit flavours fade gently away, leaving a lingering hint of caramel.

Product & Production

Whisky production: Every bottle is monitored from distillation to its final filling and dispatch, ensuring exceptional consistency and quality of taste.

Non-chill filtered and a natural colour: Bottled without chill-filtration or artificial colouring, preserving the whisky’s true character.

Matured on site: Every cask is matured in Wolfburn’s traditional style dunnage warehouses set by the sea.

Traditional craftsmanship: Whisky made by hand, using age-old methods and modern precision.

Stream flowing through a natural landscape with grass and trees.
Barley

Natural Ingredients

Water: Drawn from the Wolf burn, rising from a spring a short distance away, crystal-clear and naturally filtered through Caithness stone.

Malt: Premium, sustainably sourced malt from UK growers. A non-GM and non-GN (Glycosidic Nitrile) variety.

Yeast: Single yeast strain, bottom-fermented to bring out rich, fruity tones.

Fermentation: Long and unhurried – promoting deep, layered flavours before distillation.

With a wood policy created to deliver depth of character and balance to every drop, our meticulously sourced casks are filled with either a non-peated or lightly-peated spirit, depending on the season.

1st fill Ex-bourbon barrels from Kentucky

1st and 2nd fill Oloroso sherry butts from Spain

1st fill rum casks sourced from the Caribbean

Custom re-coopered quarter casks from Islay Cooperage in Speyside.

Surprising!

I don‘t buy if I don‘t really like it. After attending the tour and tasting the core whiskys as well four special ones, I had to have a bottle of the Manzanilla. A whisky with an exotic name, and a surprising smell and taste. Kind of fresh, but still full and complex. Not everybody‘s favourite, but definitely mine!
