There is a particular noise a whisky purist makes when they hear the words "cask finish". Somewhere between a sigh and a tut. We know it well.

To be fair, some of that suspicion is earned. The whisky world has no shortage of young spirit given six weeks in a wine cask and a fancy name, sold on the strength of the wood rather than what is in it. If that is what you think a finish is for, your scepticism makes sense. This, though, is not that. Far from it. This is the Wolfburn 12 Year Old Madeira Cask Finish. Here is how it happened.

There is a quiet air of anticipation when we head into the dunnage warehouse with a valinch and a glass in hand. Thousands of casks sit side by side in the cool Caithness air, and finding the right ones takes a sharp memory and a keen eye.

Back in 2014, we filled a hand-selected batch of first-fill ex-bourbon casks with our fresh spirit and quietly rolled them into place. Here in the far north, maturation is a slow and steady affair; our warehouses sit right on the coastline where the cold, damp maritime climate keeps temperatures remarkably even year-round. For eleven long years, the cool Caithness air worked its gentle magic, allowing the bourbon oak to slowly build a soft, rich foundational character, our character. Fast forward to early 2025, when a small delivery of ex-Madeira casks freshly arrived from the cooperage, ready to go. The whisky was carefully transferred for a final, year-long finish in this vibrant wood - imparting a stunning layer of sun-drenched, caramelised wine complexity onto our patient coastal single malt.

Why Madeira

Madeira wine and the sea are inseparable. In the sixteenth and seventeenth centuries, ships calling at the island loaded casks of fortified wine for long Atlantic crossings. The heat of the hold and the constant roll of the swell did something nobody planned: the wine came back deeper, richer, more complex than it went out. What began as an accident of transport became a style, and eventually a method.

We like that story. A whisky made at the top of the Scottish mainland, in a town shaped entirely by the sea, finished in wood that owes its character to an ocean voyage. Two places about as far apart in climate as you can get, with the same thing in common.

The whisky spent its final year in those ex-Madeira casks. Twelve months is long enough for the wood to actually say something and short enough that it does not shout over the Wolfburn character. 

The result is not a Madeira-flavoured whisky. It is Wolfburn with another layer: the orchard fruit and richness of the house style still sitting underneath, with dried fruit, sultana, orange marmalade and soft toffee laid over the top. The finish is long and warming, with dark caramel at the end of it.

Every day of those twelve years happened here in Thurso. Distilled on site, matured on site, bottled on site. The wood travelled. The whisky never did.

How we are drinking it

Neat is hard to beat, and if that is where you land, you will not hear an argument from us.

But as the autumn sets in here, our favourite pour for this one is simpler than you might expect: a generous measure over clear ice with a splash of soda. The bubbles lift the fortified wine notes and push the orchard fruit forward, and it makes a rich whisky feel surprisingly bright.

Questions, answered

What is a Madeira cask finish?

It means the whisky spent most of its life in one type of cask, then was transferred into casks that previously held Madeira wine for a final period of maturation. In this case, eleven years in first-fill bourbon casks followed by a year in ex-Madeira casks. The second cask type adds a distinct layer of flavour without overpowering our core distillery style - enhancing what is already there rather than replacing it.

Does a cask finish mean the whisky needed improving?

Sometimes, yes. It is a fair criticism of the category, and it is why some drinkers are wary. A finish can be used to dress up spirit that is not ready. The honest test is whether the distillery would have been happy to bottle the whisky before the finish. We would have been. The Madeira casks made it something different, not something better. 

How many bottles are there?

2,982. It is a single small batch drawn from just a few casks, and there will not be another one.

What does it taste like?

Ripe orchard fruit, honey and raisin on the nose, with vanilla and a little warming spice. The palate is rounded and sweet, with caramelised fruit, sultana, orange marmalade and soft toffee balanced by vanilla oak. The finish is long and warming, with dried fruit and dark caramel.

How should I drink it?

However you like. Neat, with a drop of water, over ice, or with soda the way we have been drinking it this autumn. There is no version of this that we would consider a waste.
