This remarkable whisky marks a true milestone in Wolfburn’s journey – our first ever 12-year-old single malt, a decade and more in the making.
As the third release in our celebrated Anniversary Series, it comes from Cask No.163 / 2013—one of the finest Oloroso sherry butts we’ve ever laid our hands on. Back in early 2013, a precious delivery of Spanish oak arrived at our distillery. Amongst them was a cask that when sampled through the years showed great promise and was left alone to let nature do its work.
Twelve years on that patience and foresight has matured this cask into something worthy of being our first 12-year-old release. The whisky drawn from Cask 163 is sweet, refined, and beautifully complex – a spirit that captures the very essence of the Wolfburn in every sip. More than just a dram, it’s a tribute to craftsmanship, patience, and the quiet mastery of traditional distilling. Bottled at a robust cask strength of 53.5% ABV, this limited-release of just 749 bottles is a tribute to the passage of time.
ON THE NOSE – Strong sherry aromas meld perfectly with Wolfburn’s signature sweet floral notes. An exciting glimpse of things to come.
ON THE PALATE – A panoply of flavours bursts onto the tastebuds. Oak and vanillin are immediately present, accompanied by sherry sweetness and hints of dark treacle. Wait a moment – give it time to truly reveal its depth. You’ll find honey, butterscotch, burnt orange and more, all in glorious harmony. Truly this is a delicious dram, testament to the skill of Wolfburn’s master distillers.
FINISH – We finish where we started, with wonderful sweet sherry notes making for a beautifully long, lingering finish.

    Whisky production: Every bottle is monitored from distillation to its final filling and dispatch, ensuring exceptional consistency and quality of taste.
Non-chill filtered and a natural colour: Bottled without chill-filtration or artificial colouring, preserving the whisky’s true character.
Matured on site: Every cask is matured in Wolfburn’s traditional style dunnage warehouses set by the sea.
Traditional craftsmanship: Whisky made by hand, using age-old methods and modern precision.
 
      
    Water: Drawn from the Wolf burn, rising from a spring a short distance away, crystal-clear and naturally filtered through Caithness stone.
Malt: Premium, sustainably sourced malt from UK growers. A non-GM and non-GN (Glycosidic Nitrile) variety.
Yeast: Single yeast strain, bottom-fermented to bring out rich, fruity tones.
Fermentation: Long and unhurried – promoting deep, layered flavours before distillation.
 
      
    With a wood policy created to deliver depth of character and balance to every drop, our meticulously sourced casks are filled with either a non-peated or lightly-peated spirit, depending on the season.
