Inside Wolfburn’s many warehouses lies a growing collection of ever-ageing casks, each quietly developing its unique character. While most are left undisturbed to mature gracefully, exceptional moments call for something extraordinary. The latest release in our acclaimed Kylver Series is just that – a rare single malt Scotch whisky crafted from a unique combination of first-fill bourbon barrels and a first-fill Oloroso sherry hogshead. This limited-edition Highland single malt is not only a true collector’s whisky, but also an exceptional dram—rich, refined, and full of character. 


Tasting notes

ON THE NOSE – Sweet heather honey and light oak mix with dried fruit, and there’s a beautiful rich overtone of demerara sugar and molasses. 

ON THE PALATE – Heady stuff – this really is a sumptuous dram. Maple syrup leads the way, overlaid with creamy chocolate. Give it time and deeper, more subtle flavours reveal themselves: dried autumn fruits and soft spices are present, and later the palate reveals a rich butterscotch note.  

FINISH – Light oak flavours linger to the end, overlaid with floral honey tones. A truly exceptional dram, which in many ways is the perfect example of Wolfburn’s craft.

About the Kylver series

Launched in 2016, Wolfburn’s collectors’ series is named after the ancient Kylver Stone, which was unearthed near a Viking burial site in Sweden. The stone depicts the complete Viking runic alphabet, and each whisky takes its name from a runic letter. The Kylver series reflects the unique Viking heritage of Caithness – the entire area around the distillery was once populated by Vikings, and the town of Thurso is named after the god Thor.  

The whisky inside the bottles follows no particular pattern, aside from being of exceptionally good quality. Wolfburn’s master distillers spend a lot of their time sourcing the very best casks from around the world, be it from the bourbon houses of southern USA or the sherry bodegas of southern Spain, and sometimes further afield, such as the rum distilleries of the Caribbean. All casks are different of course, and we select the best of the best to create each Kylver bottling.

Product & Production

Whisky production: Every bottle is monitored from distillation to its final filling and dispatch, ensuring exceptional consistency and quality of taste.

Non-chill filtered and a natural colour: Bottled without chill-filtration or artificial colouring, preserving the whisky’s true character.

Matured on site: Every cask is matured in Wolfburn’s traditional style dunnage warehouses set by the sea.

Traditional craftsmanship: Whisky made by hand, using age-old methods and modern precision.

Barley

Natural Ingredients

Water: Drawn from the Wolf burn, rising from a spring a short distance away, crystal-clear and naturally filtered through Caithness stone.

Malt: Premium, sustainably sourced malt from UK growers. A non-GM and non-GN (Glycosidic Nitrile) variety.

Yeast: Single yeast strain, bottom-fermented to bring out rich, fruity tones.

Fermentation: Long and unhurried – promoting deep, layered flavours before distillation.

With a wood policy created to deliver depth of character and balance to every drop, our meticulously sourced casks are filled with either a non-peated or lightly-peated spirit, depending on the season.

1st fill Ex-bourbon barrels from Kentucky

1st and 2nd fill Oloroso sherry butts from Spain

1st fill rum casks sourced from the Caribbean

Custom re-coopered quarter casks from Islay Cooperage in Speyside.
